The Pig Baron’s whole pigs and lambs on a spit are back by popular demand on Bastille Festival 2017.
The Pig Baron’s speciality is roasting whole pigs and lambs in custom-made, stainless-steel spits
Spit roasting is one of the earliest forms of cooking. The rotation cooks the meat evenly in its own juices and allows easy access for the continuous self-basting leaving the meat tender and juicy”
The pigs are stuffed with garlic, herbs and seasonings and slow-roast until the flesh is tender and the crackling golden, the lambs are rubbed with oregano and seasonings, slow-roast and finished off with a squeeze of lemon juice.
Cooking a whole animal onsite brings a bit of theatre, often hypnotising guests into photo-taking.
